Big birthday this month and I already got what I wanted — to see my waist again. What a difference a year makes. “Add, don’t subtract” in Feb 2020 the words of my food coach seemed impractical. “Does that mean eat more?” I impertinently asked.

“Yes it does” she answered. “Hmm…how can this be possible?” I thought. However, she seemed knowledgeable and I was very unhealthy and overweight at that time, so I decided to give her advice a try.

Vegetables

So many vegetables — who knew? I didn’t, that’s for sure. Well it can’t hurt I thought. So, beginning in Feb 2020, each week I’d toss one or more new-to-me vegetables into my grocery cart. Googling for recipes like ‘how to cook morel mushrooms’ became a weekly ritual. That and grocery shopping with purpose. I carefully selected each thing before I put it into my cart. “Do I want to eat that, really?” If in doubt, I left it out. In the spring I started shopping at local farmer’s markets and discovered vegetables I hadn’t previously heard of, such as fiddlehead ferns. Learned how to cook them and found, to my surprise, they tasted good.

I needed knives and cutting boards — I now have 4 cutting boards and several knives. It’s become a habit to put on some good music and chop vegetables.
